NZ King Salmon is cured in a brine of salt and water. The salmon fillets are then smoked at a low temperature in natural woodsmoke and crusted with a traditional Pastrami pepper mix.
The salmon pastrami is then sliced into thin, translucent slices, which are ideal for delicate finger foods and canapés, where taste, texture and visual impact are important.
